What is Black Tea?

When we Indians talk about tea, what we usually talk about is black tea. No, it shouldn’t be confused with the tea that is consumed without adding milk. We are referring to the type of tea that is fully oxidised and is the main ingredient in our country’s favourite drink masala tea.

Black tea is perhaps the most common type of tea available in the market. It is particularly popular in the West. Assam Tea, English Breakfast Tea and Earl Grey Tea are different kinds of black tea. What distinguishes this tea from green, white, or oolong tea is that it is fully oxidised before it is heat-processed and dried. This gives it more body and the brew is stronger than its less oxidised counterparts.

Black Tea is processed using two methods – Orthodox or traditional method and the CTC method. In the first method, the leaves are rolled and the leaves remain whole or only partially broken during processing. In the CTC method, the leaves are cut into smaller pieces and then oxidised resulting in smaller leaf particles that produce a stronger and darker brew.

When it comes to black tea, there is no dearth of flavours. Yes, the taste of black tea varies depending on the manner it has been oxidized and brewed. In fact, Pu-Erh tea, the Chinese tea that is fermented and matured for years tastes different every time you re-steep it. There are also flavoured black teas available in the market. These are essentially black tea leaves infused with different dried herbs, flowers and fruit that give them exciting flavours.
